one of the last things I expected to discover on the world’s largest sand island was fine dining. exactly how wrong I can be! turns out it’s not all just camping as well as 4×4 driving on Fraser Island on the N.E. coastline of Australia…
The last time we were on Fraser Island, it was to rough it in a tricked out Nissan Patrol. Our aim: to make it through 3 days of camping as well as driving around Fraser Island, a unique location on an already astonishing coastline.
It’s like north-eastern Australia rigged a raffle for all the most lovely or unusual things nature can create. The excellent barrier Reef? The Whitsunday Islands? Humpback whale migration route?
And it’s right here that the biggest island totally made from sand exists too? Come on, guys! Really? bit greedy, isn’t it?
Well, speaking of greedy, I was feeling precisely that when we turned up at Kingfisher Bay Resort. I must say, Mrs romance as well as I were extremely surprised to discover this truly rather significant resort here. We understood absolutely nothing about it the last time we were here!
Inside this early incarnation of an eco-resort is Seabelle Restaurant.
We weren’t as well sure what to expect. I mean, let’s deal with it, resort food isn’t precisely famed for being much good, is it? however along side its bush tucker institution (images above), the head chef right here has done some spectacular things.
He has produced a menu including as many of the aspects he talks about in his classes. They’re all either discovered locally on the island or as close-by as possible. The result is not only extremely fresh however likewise uniquely tasty too.
We were dining with 2 other people – our good friends Alexx from AlexxStuart.com as well as Jenn from TEQ… just in situation you believed we’d eaten all of this ourselves!
Here’s what all of us ate:
Entree:
For entrées, we only ordered three – Alexx has more will power than I might ever imagine!
Black Angus beef as well as smoked kangaroo carpaccio with a three-herb panna cotta as well as sour quandong jam completed with truffle oil as well as cracked pepperberry.
Maleny goat’s cheese as well as beetroot mille-feuille with infant beetroot mousse, truffle pea puree, goat’s cheese as well as Crème fraîche.
Juniper berry salt as well as pepper crocodile as well as calamari salad with Fraser Island rocket, orange, macadamia as well as Danish feta salad as well as anise myrtle aioli.
Interestingly, the only part of this meal (apart from the Danish feta of course!) that didn’t come from Australia was the crocodile.
Although we farm the crocs here, it’s unlawful to process the carcasses here. The farmers have to offer the crocs to Indonesia for leather, then we buy the meat back from them… however only the tail meat, nothing else. Weird, huh?
Seared Hervey Bay scallops with spiced capsicum coulis, Grana Padano crumb as well as dehydrated pancetta completed with Fraser Island chocolate mint.
Mains:
Mains were especially difficult to choose, however in the end all of us did the right thing as well as ordered something different so we might all get the most out of this incredible menu:
Murray River lamb backstrap with pepperberry, cumin wonderful potato puree as well as infant broccolini with toasted pine nuts.
Orange Grove Confit Pork belly Seared Hervey Bay scallops, caramelized pear as well as muntharry berry puree as well as infant apples completed with a beetroot anise glaze.
Emerald Valley beef eye fillet with lemon aspen-infused celeriac purée, thyme heirloom cherry tomatoes, horseradish crème quandong as well as rosella jus.
At very first I believed the rosella jus sounded a bit wrong. Rosellas are bit parrots, right? Wrong. As Deabelle’s head chef explained, it’s likewise a type of “scarlet coloured petal fruit, which has a crisp rhubarb as well as berry flavour, commonly utilized by colonists in jam.”
If you want to understand a bit more about the bush tucker they utilize at Seabelle, here’s the full listing of their components with taste notes as well as a bit of history to them too.
Dessert
By this stage, we were all totally stuffed, however not trying something from the dessert menu just wasn’t going to happen. Instead, we decided to share 2 dishes between the four of us:
Lemon myrtle panna cotta apple, cucumber as well as Bombay Saphire gin sorbet.
Wattle seed as well as Belgium chocolate pudding served with honeycomb, muntharry berry as well as macadamia nut ice cream.
All the food right here was beautifully provided as well as each meal so well believed through.
I was concerned that the regional components would stick out like the proverbial sore thumb in a few of these dishes, however they didn’t just blend in, they improved the flavour of the food.
I’d be back right here like a shot for more of this cuisine!
